Jesus was fulfilling the Old Testament and setting up his New Covenant (Testament).
At the Passover meal and the Jewish Seder Meal, there was no yeast, symbolising no sin.
The meals declared their freedom and it’s the same for us in that we celebrate being rescued from the dominion of darkness.
